Fields at Quatre Bras or Waterloo

Looking for some help. I am making a diorama involving a highland regiment at either Quatre Bras or Waterloo, I haven't decided yet. I need some advice on what is the best material to simulate the tall grasses or wheat fields in which the British troops made their lines and squares! I am using 54mm figures!

Any ideas?
