It would depend on what you're trying to achieve Taff.
For a cold look, shade with a pale grey.
For a warm look, use brown.
Going progressively lighter up to pure white for the final highlight.

I'm a oilman so if it is for acrylic.....
After priming i give the surface a light coat with white from Vallejo.
Let it dry. Then i mix my white oilpaint with raw umber for a light grey.
I brush that on the surface and going to paint the shades with a little more raw umber.
The first highlight is with a little touch of white.
When everything is totally dry and i mean dry i do only the highlights with pure white.
You cannot go lighter then pure white.
I have been in awe of Matt Springer's work with hair and fur and asked him how he got the soft look to it. He said, "many, many layers". If you can find some of his figures on line you will see what I mean.
