Finishing up the project, and I need to know if the scabbard was painted black or left natural steel? I see both examples. I'm modeling 1914, so I don't know if the black scabbard is a later version.

Lastly, what color "knot" would be on the Prussian Infantry Officer's sword?

Actually, both are correct.

The scabbard was black during field duty and combat. During the garrison service or for the parade the scabbard was mostly silver.
There were many variants of both, for officers procured their weapons often privately

Your Officer-figure is in fied duty and has to carry the black version.

Jon Smith has some really good figures (I have most of the germans). I myself loves the stormtrooper bust from Young and the figures from Martin Hille (Kellerkind) are very good too. But it depends on what you are looking for

Not the best, according to today standards, but Serie 77 had splendid range , you can see them on http://www.series77.com/

And superb books at Almark that show how colourfull the Imperial German army was
