This looks like a fairly typical 'weathered black' type paintjob. Start with a dark grey maybe, mix your highlight colours with white, black and a brown or earth colour, using more and more brown the lighter the mix gets. Shade with thin layers of pure black.
Notice the placement of the highlights - lots of emphasis on the edges as well as some emphasis on the lighting direction from above.

Good question. For historical subjects, particularly in the field, I do think we need to put aside the mental image of white items actually being
white. Start with the idea of off-white, light grey or beige and we're probably in the right ballpark more often than not.
Beyond that there's a lot of artistic license with some painter's styles - some people just prefer cleaner figures, with minimal or no dirt/weathering; some prefer warm whites, others cool whites.
And beyond that plenty of modellers don't care about historical accuracy, they just want painted figures to look pretty.
