Oh boy have you got your work cut out for you! I know how hard that is to do. The toughest part is keeping the hair in scale and watching the hair growth patterns. Great job so far!

Is this part of the knight you showed before? I need to dig that post up so I can remember the scale.

But look that it this way. Little horse, less hair to detail. Bigger horse MORE hair to detail. ;)
 
Yes, this selfsame knight, but hair is not difficult, more difficult to come up with pictures on the horse-cloth. A little later.
