In France for Museum, "Les Invalides", for shop there's not alot.
They are quite expensive .
Euromodele (Gare de Lyon) easy to find, the vendors are friends and very competent (just alittle choice of figures)
Blast models mostly 1/35°, own production, same for the vendors.
Eol, rue du Louvre, expensive, the kit vendor, is one of my friend, but the people how work here except him are not really nice. But you can find some OOP figures, you have to ask, all figures are not exposed.
Azimut/ADV rue de Turenne, famous for is own production, mostly 1/35°, some HTF old kits and figures. Be careful this shop is going to be close definitively soon.
Cine Créatif, near Paris, hard to find, the only shop for figures in all the Paris area.
And if you enjoy planes, AZUR, rue Decaen, a very little shop open only friday and saturday afternoon, little but with a lot of hard to find kits.
France is now very poor in interesting shop, quite all the same kit and figures, and prices are quite always very high.
Last, if you have time, there's a Museum very interesting in Napoleonics, quite far from Paris "Le Musée de L'Emperi", in Salon de Provence, but you can reach it with the TGV, and here you can also see the French Air Forces school.
If i remember others shop or Museum, i'll send you a message.
