Does anyone know if the paratrooper uniform came with the elbow and knee patches sewn on - or we're they added on by the troopers themselves - and if so were they a regular colour, or did they vary a lot?

The 'Jump Suite' was originally without the reinforcing patches. Just prior to the Normandy Invasion, the 'suits' had reinforcing patches that were usually of a greenish waterproof material sewn on at the elbows, knees and pocket bellows. This work was most probably done by quartermasters and unit riggers. Supposedly more than 90% of all jump suits were thus modified before D-Day. The greenish patches would fade to a gray color after washing.
